Fall is my favorite time of the year for many reasons, but one of those is all of the yummy soups and treats that we get to indulge in! It’s like the perfect kick-off to the holidays and makes everything feel so cozy.
I wanted to share our favorite vegetable chili recipe (which can totally be made with your favorite meat, too) because it’s just one of those hearty, feel good meals that can be eaten on for days (hello mega-leftovers!)
We first started this recipe when we were on the Daniel Fast. It’s filled with lots of yummy veggies, and we’ve even used beefless ground to keep it vegetarian and still get the meaty flavor. It’s relatively simple to make once you get the hang of it, and it’s so nice to have lots of leftovers to enjoy for days later.



I also wanted to share my moms recipe for the best pumpkin cookies, ever. They are my absolute favorite fall treat and I look forward to them every year. The cream cheese icing makes them even better. You can use pre-made icing to make things easier, or make your own from scratch. I’ll always prefer the homemade, but sometimes you’re just in a hurry and need them done quick!
